Carrot Cake

2 cups sugar
1-1/2 cups vegetable oil
4 eggs
3 cups grated carrots
2 cups flour
2 teaspoons baking soda
2 teaspoons ground cinnamon

1 (8 ounce) package cream cheese
1 pound confectioners’ sugar
1/3 cup butter
2 teaspoons vanilla extract
1 cup chopped walnuts

Preheat oven to 325 degrees F. Grease two layer pans (8 or 9 inch? Recipe doesn’t say).

In a large bowl, mix together sugar, oil, and eggs. Stir in carrots.

In a separate bowl, combine flour, baking soda and cinnamon; gently stir into carrot mixture. Spoon batter into prepared pans.

Bake for 35 minutes or until toothpick inserted into cake comes out clean. Remove from oven, and set aside to cool.

When cake is cool, prepare frosting: In a medium mixing bowl, mix together cream cheese, sugar, butter and vanilla and blend until creamy. Stir in walnuts. Frost the top of bottom layer. Add top layer. Frost top of cake and sides.

Peas with Bacon

4 slices bacon
1 medium onion, chopped
2 T. melted butter
1 T. flour
1 c. half and half
2 10-oz. pkgs. frozen peas
4 oz. can sliced mushrooms, drained

Cook peas according to package directions; drain and reserve.

Fry bacon until crisp, drain, reserving drippings. Crumble and set aside.

Saute onion in bacon drippings. Add butter and flour to skillet, blending well. Gradually stir in half and half. Cook over low heat until smooth and thickened.

Add peas and mushrooms; sprinkle with bacon. Makes 6 servings.

Stuffed Tomatoes

6 medium tomatoes
one slice of bread, broken up
1/2 lb. ground beef
diced onion
salt and pepper
buttered cracker crumbs

Cut tops off tomatoes, and hollow out insides.

Combine about 3 of the insides with bread, beef, onion, salt, and pepper. Stuff tomatoes with dressing and top with buttered cracker crumbs.

Bake at 350*F for 45 minutes.

Hot Ham Sandwiches

12 hamburger buns
enough sliced ham for 12 sandwiches
12 oz. sliced Swiss cheese
2 sticks butter
2 t. mustard
1 small chopped onion
2 t. poppy seeds
splash Worcestershire sauce

Melt butter in small skillet. Saute onion until soft. Add mustard, poppy seeds, Worcestershire. Spread sauce on insides of hamburger buns. Add ham and cheese. Wrap each sandwich in foil.

Bake at 350*F for 15 minutes.

Meat Casserole

2 lbs. pork, round steak, or veal, cut in pieces and cooked until nearly done
8 slices dry bread, broken in pieces
1 can cream of mushroom soup
1 can cream of celery soup
1 can cream of chicken soup

Mix everything together and bake 1 hour.

Strawberry Parfait Crown

3 c. fresh strawberries
1 baked 9″ pie shell
3-oz. pkg. strawberry Jello
1 c. hot water
1/2 c. cold water
1 pint vanilla ice cream
1/2 c. whipping cream, whipped

Dissolve Jello in hot water. Add cold water; stir. Add ice cream cut into six chunks. Stir until melted. Chill until mixture mounds slightly when spooned (20-30 minutes).

Gently fold in 2 c. sliced strawberries. Pour into pie shell. Chill until firm, 20-25 minutes.

Trim with whipped cream and 1 c. strawberries.

Oatmeal Pie

3 eggs well beaten
2/3 c. white sugar
3/4 c. brown sugar
2/3 c. oatmeal
1/2 c. coconut
1/2 c. nuts
2 t. vanilla
2 T. butter, melted

Beat eggs; add sugar and rest of ingredients. Pour into unbaked pie shell.

Bake at 375*F for 30-40 minutes.

Pumpkin Pie

1 (15 ounce) can pumpkin
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
2 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9 inch) unbaked pie crust

Preheat oven to 425*F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.

Reduce oven temperature to 350*F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool.
