Spiced Pineapple Apple-Peel Sauce

1-1/2 cups pineapple (fresh or frozen)
peels from 4 to 5 large apples
1/4 cup water
2 Tablespoons brown sugar
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/8 teaspoon cloves
1/8 teaspoon ginger
1/8 teaspoon allspice

Put all ingredients in a slow cooker and stir.

Cook on low for 9 to 10 hours, stirring once or twice while cooking.

When done, lift slow cooker pot out and set it on a trivet to cool for 15 minutes.

Then pour into a blender and blend on high for a minute or until the mixture has a smooth consistency.

(Alternatively, you can pour the slow cooker contents into a bowl with high sides or a 2 cup Pyrex measuring cup. Use an immersion blender to blend all ingredients to a smooth consistency.)

Store in the refrigerator.

Makes about one cup.

Note: Best eaten as a flavoring rather than plain. I add a tablespoon to yogurt or cooked oatmeal.
