Spicy Roasted Macadamia Nuts

1 pound raw, unsalted macadamia nuts
1 to 1-1/2 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon curry powder (I like Penzey’s curry)
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1-1/2 tablespoons lemon juice
3 tablespoons unsalted butter

Preheat oven to 300F. Put the macadamias on a baking sheet and spread them out. Once the oven reaches temperature, place the baking sheet with nuts on the middle rack of the oven and bake for 15 to 20 minutes.

In a small bowl, mix together the salt and spices. Set aside.
In a large skillet, melt the butter over low heat.
Add the roasted macadamia nuts and stir.

Sprinkle the salt and spice mixture over the nuts. Stir so that the spices are evenly distributed. Turn the heat up to medium and cook for a couple of minutes.

Add the lemon juice and stir to combine. Remove the nuts from the heat and place in a single layer on wax paper. Serve when cool.

To store for a longer period of time, you can keep them in a Tupperware container in the refrigerator. The nuts will stick together due to the butter but you can break them apart with a spoon.
