Peanut Butter

Preheat oven to 350°F. Line a baking sheet with parchment paper.

Roast 1 pound of peanuts for 5 minutes. Let cool for 10 minutes. If the peanuts have skins, rub the peanuts between your hands. This will remove the skins and you can discard them.

Blend the peanuts in a blender until smooth. This will take several minutes and some blenders may overheat. To prevent this, blend for 1 minute increments, letting the blender cool for a couple of minutes in between each 1 minute blend.

Optional: When smooth, add 1/8 to 1/4 teaspoon of salt and 1 teaspoon of maple syrup, honey, or molasses. Blend for another minute.
