6 ounces salmon (canned or envelopes)
1/2 beaten large egg*
1/4 cup crushed Ritz crackers
a few dashes of Old Bay Seasoning

Drain and reserve liquid from salmon; place salmon in a medium bowl. With a kitchen scissors or fork and knife, break apart or cut the salmon until it is in small pieces.
Add the cracker crumbs, Old Bay Seasoning and egg; mix well to combine. Add the reserved liquid from salmon, about a teaspoon at a time, until the mixture is moist enough to hold a shape.
Shape the mixture into two patties.
Heat oil in a large skillet over medium heat; add patties and cook until golden brown, about 3 to 4 minutes per side.
*One egg, beaten, is a little less than 1/4 cup, so use about 2 tablespoons of a beaten egg.
