Vegetable Powder

1 (two pound or 32 ounce) bag of frozen, chopped, mixed vegetables (like broccoli, carrots & cauliflower)

Spread vegetables out on dehydrator trays. Dehydrate at 140 degrees for 13 hours.

Put half of the dried vegetables in a blender and grind until powdery, pausing once a minute to check the status and allow the blender to cool. When the first half is done, use a funnel to pour the contents into a jar. Repeat for the second half.

One 32 ounce bag of vegetables has 11 (2/3 cup) servings and makes about 18 teaspoons of vegetable powder. This equates to a little over 1.5 teaspoons per serving. You can add this to marina sauce and serve over pasta.

Alternatively, you can pack it into capsules. If you make 0 size capsules, one serving will be 10 or 11 capsules (because 1 teaspoon = 7 capsules).
