Lemon Pine Nut Spinach

2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon lemon juice
1 clove garlic, minced
1 pinch sea salt
1 pinch ground black pepper
5 ounces baby spinach
1 tablespoon pine nuts

Add all ingredients except pine nuts to a large skillet. Stir together. Cook on medium until the spinach is wilted.

Remove from heat. Add pine nuts and serve.
