Lemon Basil Salmon

2 (6 ounce) salmon fillets
2 cloves garlic, minced
3 tablespoons olive oil
1 teaspoon dried basil
1/8 teaspoon pinch of dried dill weed (optional)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon lemon juice

Preheat oven to 400 degrees. Line a baking dish with aluminum foil. Place salmon on top. Fold up the sides of the aluminum foil around the salmon.

In a small bowl whisk together the other ingredients. Pour the sauce over the salmon. Top the salmon with aluminum foil and seal.

Bake for 25-35 minutes until salmon is cooked throughout. Cooking time will depend on the thickness of the salmon; chinook (king) salmon is usually the thickest and will take longer than sockeye or coho.
