Filo Cheese Rolls

6 eggs, separated
1 lb. feta cheese, crumbled
12 oz. cottage cheese
1/4 c. blue cheese, crumbled
3 T. minced onion
16-oz. pkg. pastry sheets or strudel leaves
2 c. melted butter

Beat egg whites until stiff; add yolks and continue beating until well-blended. Add cheeses and onions; mix well.

Cut pastry sheets into quarters. Brush pastry with hot, melted butter. Place teaspoon of cheese mixture in bottom center of pastry strip, folding over 1/3 on each side. Brush again with butter. Roll like a jelly roll.

Place on cookie sheets and bake at 350′ for 20 minutes. If frozen ahead, do not thaw. Instead, bake at 350′ for 30 minutes. Serves twenty.
